Recipes After Bariatric Surgery- Chicken Pasta Salad

If you pack your lunch for work each day, it gets so tiresome trying to figure out what to put in there.  It can be hard to find good recipes after bariatric surgery, so I’m sharing a recipe with you that is healthy and packs a nice punch of energy to get you through the second half of the day.  It makes four servings, so you can place it in four lidded containers and pack for lunches at once!  It’s a nice change of pace.  Try it and tell me what you think of it, and if it provided the energy you needed.


Shake & Serve Chicken Pasta Salad     (serves 4)

Great for packing in lunches


¼ LB   Bow tie pasta (or other small pasta)

2 TB    Pesto sauce

4 TB    Fat-free Italian dressing

2          Skinless, boneless cooked chicken breasts, cubed

Sliced cucumbers

Cherry tomatoes, halved

4 oz.   Lettuce, any variety


  1. Cook pasta in boiling water about 6-9 minutes, until al dente.  Drain and place in large bowl
  2. Toss pesto with pasta (adds a nice depth of flavor)
  3. Divide the dressing between 4 lidded lunch box containers.  Layer each container with: pasta, chicken, cucumber, tomatoes, lettuce.  Top with firmly fitting lids and chill until required.
  4. Just before serving, shake the container to mix all ingredients together.  Lettuce should stay nice and crisp when you wait until this point to mix it with the dressing.


This recipe is under 200 calories, about 15g protein, and about 22 g of carbs.
